Chef Leslie Martini has a lifetime of experience within the tourism industry.
He worked at the Hotel des Indes, Kurhaus, and a booming nightclub in Scheveningen (Netherlands). After this, he decided to chase his lifelong dream of owning a restaurant, and so he studied to become a chef.
He came to Sint Maarten to run a restaurant and supermarket in Oyster Pond, and when the owners asked him 20 years ago if he knew someone interested in buying, his answer was: “Me!” They gave Leslie the keys and told him he could pay whenever he was ready.
He transformed the location into a Seafood restaurant with flair, with elegant white decor, greenery, and gorgeous chandeliers. “Big Fish” was born!
While Leslie takes care of the kitchen, his partner Donna runs the floor. Together with an experienced team, you can expect great recommendations and service with a smile.
Inspired by the diversity of SXM, Chef Leslie uses French techniques with a Caribbean flair and Indian influences. Some of their famous dishes are:
- “Hightide”: Codfish cooked in wine & butter and served with hemp flower, steamed spinach, and lemongrass sauce.
- “Classic Cadillac”: Mahi Mahi cooked in wine & butter, served with real crab meat and lobster sauce.
- Short Ribs braised for 6 hours in a red wine reduction.
Combine these dishes with a wine from their great selection.
Or ask bartender Michael to make you a unique Caribbean cocktail; with 32 years of experience, he can make any drink you like!
A business where the staff works with passion and everything is executed with care for its visitors. Last but not least, parking is never a problem at Big Fish with lots of spots right in front of the restaurant.

Probably the best meal we had while on vacation. It was a real joy watching the chef prepare the plates with such pride. Everything was delicious and the place was beautiful. Would DEFINITELY recommend this restaurant for a quality meal. Will definitely go back next time I am in Saint Martin.
