Owner Roland Joe, alias “Bushman,” was born in Curacao and grew up farming. In 1985 he came to live with his grandfather in SXM and started farming up on the hillside to provide for his family and the local community. He grew Sint Maarten Callaloo (local kale), spinach, tomato, okra, thyme, pakchoi, arugula, and much more.
Over the years, it became harder to grow due to less rainfall, no governmental support for agriculture, and a heavy increase of invasive species such as iguanas and monkeys. Bushman adjusted his crops and nowadays grows most of the above inside his greenhouse and uses the hillside for fruit trees, herbs, and spices such as garlic, turmeric, ginger, oregano, thyme, spring onions, curries, and so forth.

Now the restaurant is serving breakfast and lunch from Monday to Friday. Saturdays, they invite you for dinner and reggae music on their famous redemption night, in which Bushman likes to inspire people with music, food, and culture.
Dinner on any other day than Saturday is possible upon reservation; just let them know how many persons and they will happily arrange it.
Freedom Fighters Ital Shack did not only enjoy recognition by Anthony Bourdain but was also highlighted by Forbes, Happy Cow, and listed in USA Todays Best 10.
Everyone visiting is full of admiration as it is the highest-rated Vegan/Vegetarian restaurant in SXM, with a 5.0 rating on TripAdvisor and Facebook and a 4.8 on Google.
